Red Velvet – The Cake That Symbolizes Love

However, to achieve the vivid red color we recognize today, bakers later began adding red food coloring.

Before the 1920s, red velvet cakes had a darker, muted red tone. The bright version we know today became popular thanks to Adams Extract Company, which promoted its red food dye by featuring it in red velvet cake recipes.
